「If it were not for 〜」は「（今）もし〜がなければ」を意味します。
「今という時点に〜がなければ」と現在の仮定を表すのがポイントです。
この表現は何度も例文を音読して、丸ごと暗記してしまいましょう。

- If it were not for your help, I couldn’t do it.
「あなたの助けがなければ、私はそれをできないだろう。」 - If it were not for water, no living things could live.

「If it had not been for〜」は「（あの時）もし〜がなかったら」を意味します。
「あの時という時点に〜がなかったら」と過去の仮定を表すのがポイントです。

「あなたの助けがなかったら、それをできなかっただろう。」 - If it had not been for the doctor, I might have died.

「if it were not for」と「if it had not been for」は「without」や「but for」で書きかえることができます。
長い表現をたった一語で書きかえることができるので、とても便利な表現です。

「if it were not for」と「if it had not been for」は、正直なところ丸暗記が一番効率的です。
しかし、なぜこのような意味になるのか気になる方のために、以下の例文を使って、成り立ちについて触れておきます。
例文
If it were not for his help, we couldn’t finish the task.
「もし彼の助けがなければ、私たちはその仕事を終えられないだろう。」
上の例文では、2つのポイントに注目しましょう。
２つのポイント
- itは、後から述べられる漠然とした内容や状況を表す非人称のit
※例文では「仕事を終えられること」を指します。 - forは「理由・原因」の意味を表す
2つのポイントをを踏まえて、例文を直訳すると「もし仕事を終えられることが彼の助けが理由でなければ、私たちは仕事を終えられないだろう。」と非常に回りくどくなります。
これらを簡潔に訳したのが「もし〜なければ」という訳です。
「もし〜が…の理由でなければ」が「もし〜なければ」という意味に解釈されたということです。
しかし、いずれにせよ「if it were not for〜/if it had not been for」は何度も音読して、丸暗記することをおすすめします。
